So, one of the tricks that many cake decorators use for large bulky cake models, is to use an inner marshmallow rice base.

This means the model is not only lighter for the cake, but you also get an extra treat and not just a big block of modelling paste.

They are very easy to make yourselves, just a little messy :)

Lovely dipped in melted chocolate too.

You will need:

50g Butter

200g Marshmallows

150g Crispy rice cereal

A heavy bottomed saucepan

Glass bowl

Heat proof spoon or spatula

Method:

Melt the butter in your pan on a high heat.

Add the marshmallows and stir until melted.

Take off heat for 1 minute.

Add the rice cereal to a glass bowl.

Pour over the melted Marshmallows and stir in to cover all the cereal.

I leave to cool a little, then i grease my hands with vegetable shortening to mould into the shape.

Note: Your pan may look destroyed but it does come clean very easily :)
